What is Red Beans and Rice?
If you've never eaten red beans and rice you are missing out. This meal is a popular food in the lower part of the country, specifically Louisiana. It's almost as frequently eaten as jambalaya. Red beans and rice is normally created with dark red kidney beans that are boiled down so that the end result is a thick gravy. It is obtained by smashing a portion of the beans near to the time that it is ready to serve. Tasso, or some type of pork or ham hock, is usually added for added taste. Many people like to add in sausage either into the mixture or to the side. This is the normal process of making red beans and rice, it's even the same way that the New Orleans style is made. Though this is not the only way. There's tens of thousands of different recipes though it depends on the chef's preference or location it is cooked in. Another way is to cook a meatier style that splits the ratio of meat to beans at around 50/50. The meat usually added is generally ground beef or pork, tasso, sausage, or pieces of pork roast. The seasonings range, though it's normal to have anything from basil, paprika, bay leaves, stock, various types of pepper, and the compilation continues on to name just about anything that can be considered a spice. One thing they have in common is the veggies that are added. Almost all of these have a minimum of either bell peppers, onions, celery, and occasionally tomato.
